That explains that a combination between both whisky and wine piqued my interest. You see, I couldn’t resist this Ballechin Straight From The Cask 12 years old, Heavily Peated Bordeaux Cask Matured. I just couldn’t, even if I would.
Opening this one up, always make me feel like I’m walking around in a beautiful old wine cellar. Moisty stone walls, dusty bottles, a cheese platter is waiting for you upstairs, if you’re lucky. This Ballechin lends itself extremely well for pairing with jerky, old cheese or dried dates.
Islay, Barley, Peat, Wine Gums, Dry, Seaweed, Gunpowder, Melted Chocolate.
Dry, Smooth and Sweet, Full of plums, Spiced Wood, Chalky, Very Mineral.
Fireworks, Toast with Brie, Cherries, Apple Pie, A bit Sulfurous, Forest Fruits, Yoghurt.
